I wouldn’t say they save water at all. They suck it up out of the ground and in western KS (where this pic is likely from) there is quite the controversy with regards to irrigation because the aquifers in some areas are literally being sucked dry. I am too lazy to look up figures, but water table levels in some parts of the state, especially with the drought of the last two summers, are dropping several feet per year. The flip side is that without the water provided by irrigation the land is not nearly as profitable.
